Spicy Grilled Prawns Rice Noodles salad is my and my family’s all-time favorite. It’s actually an inspiration from the dish I had when I was in New Zealand. And whenever I miss that dish I try to make my version of it. It’s full of flavor and healthy too. 

You can have it as a side dish or as a meal too if you want to eat healthy food, We usually have it as a meal, it’s not heavy but fill your stomach 😀

Directions

This is a great, fresh salad with a fantastic Vietnamese dressing. I really like this dressing because it's got plenty of flavors and the fish sauce is mild in it.

Step 1

Marinate your prawns with the ingredients of "Marinate for Prawns" in a bowl for great flavors marinate the prawns for a minimum of 30 mins. But if you're in a hurry you can marinate it for 10-15 mins, depends on how much time you have :)

Step 2

Make your dressing by combining all the ingredients of "Salad Dressing", put it aside.

Step 3

Now cut all the veggies in julienne shape, except green onions. Chop green onions will use for garnishing.

Step 4

Take a big bowl and fill it with tap water and soak your rice noodles in them for 5-8 mins, it will soften them. Meanwhile, fill a large saucepan with water and put it on a stove, as soon as small, little bubbles start to appear put your rice noodles in it and give it a stir. Let them cook for 2-3 mins, take a small piece of the noodle to check either it's done or not. As soon as they are ready strain them and put the noodles in cold water, this way the noodles won't cook anymore. Tip: Keep them in the cold water to avoid stickiness.

Step 5

Once your noodles are ready heat your grilled and brush it with a little oil. Cook prawns for 2 minutes, or until browned and the prawns are just cooked through*. Remove the prawns from the skillet onto a bowl in which they got marinated. *How to tell if prawns are cooked: raw prawns hang almost straight, perfectly cooked prawns curl into a "C" shape and overcooked prawns form a tight "O" shape.

Step 6

Arrange the noodles and remaining Salad ingredients on a large plate or a bowl. Top with prawns (warm or at room temperature). Drizzle over the Dressing (or toss through) Serve immediately.
